HONDURAS - El Cielito Natural
HONDURAS - El Cielito Natural
El Cielito is a field blend of microlots produced by a handful of farmers right around Santa Barbara mountain overlooking Lake Yojoa. It is a place where forests, coffee farms, and a small town come together. All of these farms face east toward the morning sun, delicately ripening the mixed varieties found in this coffee. Once the ripe cherries are harvested and sorted they are dried in covered parabolic dryers on raised beds or on patios for 15-20 days. In the cup, we taste the freshness of a raspberry tart, sweet orange zest along with the layers of a classic candy bar.
We’ve had the fortune to know Benjamin Paz and follow his work for many years so getting to finally bring a coffee in is a sweet connection. San Vicente has been owned by the Paz family since the early 80’s but Benjamín in recent years has made waves in the industry, building a beautiful network of producers and buyers allowing many farmers in underserved areas to flourish. This mindset connects deeply with us as we seek to elevate producers in underserved places that have beautiful potential to produce amazing coffee and have flourishing businesses doing so. All of which is made possible by the Paz family’s infrastructure and Benjamin’s relational focus.

How should I brew?
We think you should brew any way you like. But if you're looking for recommendations, a 1:16 ratio of coffee to water is our favorite. 60g/L is good too, if you're into that.
Grind your coffee fresh at a medium-ish grind size (depending on your brewer), heat up some nice water, and you're most of the way there.
If you're using a V60, 20g of coffee to 320g of water is great, and it's helpful to have a pouring kettle. Bloom, wait, and then pour high and in a steady stream for a nice extraction.
If you're using a batch coffee maker, 60g of coffee to a liter of water is just right. Brew it up and let it rip.

What should I do with a Liaise Coffee Bag Clip?
Yes, our 12oz coffee bags are resealable. BUT if you get a 5lb bag, it is not resealable. If you decide to go big with a 2lb or 5lb bag from Liaise, the bag clip is a perfect tool. Just remember, the Liaise Coffee Bag Clip is NOT a chip clip. It's a coffee bag clip.
