High in the páramos lives Don Sebastián Gaucha Huamán, a coffee farmer and proud member of the Purmurco community, whose members are known as the guardians of the highlands. On his farm, El Roble, Don Sebastián cultivates 1.5 hectares of land, tending it daily with dedication and perseverance. For him, coffee is not merely a crop, but a legacy; one that must be protected and passed on with responsibility. He understands that from the páramos flow water, life, and the livelihoods of many families. 

A páramo is a tropical alpine tundra and they are one of the world’s rarest ecosystems, with Peru being one of the few countries to feature them. The páramos are a unique hub of biodiversity and play a major role in the communities that lie below them. This coffee, grown at 2100M of elevation just below the páramos, is a beautiful fully washed lot from Finca El Roble, and gives us notes of white honey, raspberry jam, and apple fritter.

How long will it take to receive my order?

All orders are roasted and shipped every Monday. All orders are shipped using USPS Ground Advantage. For people in the DFW area, expect orders to be delivered in 2-3 business days. For people outside of the DFW area, expect 2-4 business days for delivery.

How should I brew?

We think you should brew any way you like. But if you're looking for recommendations, a 1:16 ratio of coffee to water is our favorite. 60g/L is good too, if you're into that.

Grind your coffee fresh at a medium-ish grind size (depending on your brewer), heat up some nice water, and you're most of the way there.

If you're using a V60, 20g of coffee to 320g of water is great, and it's helpful to have a pouring kettle. Bloom, wait, and then pour high and in a steady stream for a nice extraction.

If you're using a batch coffee maker, 60g of coffee to a liter of water is just right. Brew it up and let it rip.

What should I do with a Liaise Coffee Bag Clip?

Yes, our 12oz coffee bags are resealable. BUT if you get a 5lb bag, it is not resealable. If you decide to go big with a 2lb or 5lb bag from Liaise, the bag clip is a perfect tool. Just remember, the Liaise Coffee Bag Clip is NOT a chip clip. It's a coffee bag clip.
