Natural processed coffees in Uganda are a bit more of a standard or cultural practice for the origin and are classified with a commercial moniker of “Drugar” (Dried Uganda Arabica)  which are often reminiscent of more mild Brazil naturals.  When done really well however,  like this selection is, they can carry much more heft and complexity, far than anything mild.

Norman Mukuru is every bit of a local coffee savant. He’s been in the trade a long while and we’ve actually crossed paths with him in years past when buying there. Fast forward to now, he’s very much earned the deserved  credit of this coffee’s beauty that is produced in the foothills of Mt Elgon in eastern Uganda. And when you are there it feels as if you’re in one of the more lush places on the planet. It’s right on the equator, making for excellent coffee growing conditions, but also very difficult for meticulous processing like Norman has done here. In it, we taste loads of purple fruit, sweet balsamic vinegar reduction, almond pastry and lemon zest.

How should I brew?

We think you should brew any way you like. But if you're looking for recommendations, a 1:16 ratio of coffee to water is our favorite. 60g/L is good too, if you're into that.

Grind your coffee fresh at a medium-ish grind size (depending on your brewer), heat up some nice water, and you're most of the way there.

If you're using a V60, 20g of coffee to 320g of water is great, and it's helpful to have a pouring kettle. Bloom, wait, and then pour high and in a steady stream for a nice extraction.

If you're using a batch coffee maker, 60g of coffee to a liter of water is just right. Brew it up and let it rip.

What should I do with a Liaise Coffee Bag Clip?

Yes, our 12oz coffee bags are resealable. BUT if you get a 5lb bag, it is not resealable. If you decide to go big with a 2lb or 5lb bag from Liaise, the bag clip is a perfect tool. Just remember, the Liaise Coffee Bag Clip is NOT a chip clip. It's a coffee bag clip.
